Gypse Haus History

Gypse Haus Meads was started in 2011 as a side project while living in a horse trailer in Challis, Idaho. 

There was a dilemma; too much fruit from her Bountiful Baskets purchases going to waste! With only one person to consume that much produce, Rachel learned how to make it into mead. After calling some mead making mentors and getting a hold of the local honey people, she set up four 1 gallon carboys to try her hand at some fun flavors. 

They were not great. 

But they were not bad either! So, she tried again with better results. From then on Rachel was hooked! Her friends started requesting bottles after they were taste testers and from there the dream of going full time was born. 

It has been a long hard journey. One filled with sadness and success.

Rachel is proud to offer her mead to the great state of Idaho! Stop on by the shop to try some and take home to enjoy.

The Journey of a Gypse

Originally from Maine, Rachel has lived in a variety of states including West Virginia, Colorado, Montana and finally Idaho. After many miles filled with grandeur and heart ache, Rachel has landed in beautiful Council, Idaho to create her delicious meads. 

She is a horse woman, a crafter, photographer and artist with far too many ideas for the hours in a day. 

When she is not in the meadery, Rachel can be found foraging for wild fruits and herbs to be used in teas and the mead. She enjoys spending time with her retired BLM mare from Salt Wells Creek, Wyoming, training her new addition from the Challis, Idaho HMA, and riding Duke, a beautiful buckskin Quarter Horse, all while accompanied by her trusty side kick, Nissa the mead mut. She also has Maia the mead kitty as in-house pest eradication manager who often tries to help with paperwork.
