Flavor Profiles

Gypse Haus Meads specializes in malomel sack meads, meaning fruity and sweet. They tend to run strong topping out at 14% alcohol by volume which makes them perfect to be enjoyed over ice or mixed with something bubblie! We recommend using sparkling water or club soda, ginger ale or even just by it's self. Does not pair well with tonic however. 

Store in a cool dark place up to 2 years. Once open, keep refrigerated for long term enjoyment.

Heirloom Apple Mead

When was the last time you went apple picking? Or found an ancient tree from the turn of the century along the hiking trail? This mead has a light flavor of heirloom apple from the early days of Idaho's booming fruit industry. Not overly sweet, and just a tad strong, this mead is delicious alone, makes a perfect spritzer, or warmed with a spiced rum.

Lavinia's Blackberry Mead

Grandma Lavinia grows the best blackberries around! They make a delightful mead that has that fresh picked flavor. With the perfect amount of blackberry and rich honey notes,  this mead will be sure to please! It makes a perfect spritzer on ice. Garnish with a few blackberries!

Mrs. Stevi's Raspberry Mead

Remember picking raspberries as a kid and getting more in your mouth than the bucket? Well this mead will take you back to those fond days, minus the thorns. It provides bold raspberry flavor with just the right amount of sweetness for those who want something mellower. This mead is Mrs. Stevi's absolute favorite flavor, a great friend and long time patron of Gypse Haus!

Cowboy Candy Mead

Cowboy Candy is a pickled treat made with sugar and spices hailing from a Texas ranch in the early 1900's. Today you can find it on many a preserver's shelf here in the west. This mead is made with Jalapeno and Serrano peppers grown right here in the meadery garden. They were allowed to ripen to their bright red colors and fermented right along side the honey into a deliciously spicy sweet mead that is sure to delight your tastebuds! 

Elderberry Mead

Elderberries are an interesting fruit when it comes to how people taste them. Some folks love them! Though delicious right off the bush or cooked down into syrups, elderberries can have an off flavor to some people. If you like elderberries than this mead will taste a lot like a strongly flavored, and high abv malbec. However, if you do not like elderberries, than you wont like this mead at all. 

Wolff's Orchard Pear Mead

The Wolfe family of Washington County, Idaho are a bunch of amazing people. Their private pear orchard is no different! Never sprayed and only fertilized by their beautiful flock of sheep, this hundred tree orchard produces beautiful fruit for mead that has a refreshing green pear flavor with just the right amount of sweetness!

Chokecherry Mead

I promise it won't choke you! Chokecherries are a wild fruit known for their extreme astringency that makes the mouth feel dry, but not when fermented! They have an interesting sweetness that tastes very old fashioned, like sun-drenched lace on grandma's porch. This mead is a little sweet, a little fruity, and beautifully wild!​

Huckleberry Mead

What could be more fun than heading up in the hills to eat just as many huckleberries as you place in your bucket? This richly colored mead is much like sangria in profile: perfectly flavored with fresh huckleberries, lightly sweet and just a hint of tart! Would be perfect over ice for a picnic in the sun.

Wild Blueberry Mead​

The Gypse hails from the great state of Maine and grew up spending her days playing in the North woods picking and eating the blueberries that grew everywhere. This mead is made with wild blueberries that only Maine can provide, shipped frozen directly to be made into this "wicked good" mead! It's profile is that of sangria, but with a fresh blueberry finish.

Harvest Pumpkin Mead

This isn't your typical pumpkin spice... because its not spiced! This pumpkin mead is pure fruit, with a delicious crisp flavor that is sweet and wonderful! Made from roasted Jarrahdale and Fairytale pumpkins.

Golden Honey Mead

Who doesn't love the sun! The Golden Honey Mead will fill you with lovely and sweet rays of pure sunshine. Accompanied by light notes of citrus, honey, and happiness that only mead can provide!

Golden Myrobalan Plum Mead​

Myrobalan plums (pronounced My Ro Bal En) hail from China, brought over by the workers during the golden age of mining here in Idaho. They are small like a cherry, often called Cherry Plums, and are quite sweet and tart. The trees I pick from are over 100 years old, still thriving in the Brownlee Reservoir canyon. They come in a variety of colors (2025 is of the Golden variety) and are wildly productive! The mead still but comes off almost cider like; sweet, tart, and absolutely addictive!

Memaw's Pie Cherry Mead​

Memaw Marvin had the most beautiful pie cherry tree this year! (Check out our FB or Insta for pics) She invited me to pick it to make some mead! This flavor is a little spicy and fruity, like a spiced cherry pie! It's not overpowering on the cherry flavor, and will be delicious over ice or warmed for a mulled mead. 

Strawberry Mead

I have such pleasant childhood memories going up to Tate's strawberry farm back in Maine to pick strawberries every spring. Now I get my strawberries here in Idaho! The Strawberry Mead has a great flavor that isn't over powering yet very addictive! This will pair nicely with any meal or for getting ready for a girls night out! Named for my sister of a best friend and very first patron of Gypse Haus. 

Strawberry Rhubarb Mead​

​The Gypse grew up on strawberry rhubarb pie, it was a favorite of her mother's. Though she never baked it herself, it was bought at the bakery and brought home to eat with ice-cream. This mead tastes very much like the insides of a pie, all that's missing is the crust!
